Chuski Chai Ki

(Slurping Tea)

 

While attending a meeting with seniors, super seniors: tea served with  Khadder, Marie biscuits specially for Diabetes, sips started, biscuit noise was prominent many dipping them wet in Tea, empty cups slowly and softly placed in front, I was the only person having Chai Ki Chuski (slurping Tea with sucking noise) others were sipping Tea without a noise, put me in such a embarrassing situation, many were looking with a mischievous eye: placed it on the desk in front, after the first sip, to be removed: came to my room and practiced, in fact, for many days as how to sip hot tea without noise; but failed; failed miserably, meetings came and finished, I would take tea when certain having a friend enjoying Chai Ki Chuski like my native Punjabis.

 

Chai a wonder devotion drink, not a beverage, an experience calm and soothing; Gur jaggery Chai is supreme a nectar Amrit prepared with care and cautions too: selection of jaggery a secret; select the sweet one dark brown: sour or with soda contents added for bright colour would split the milk when added unless it is boiled at least for five -six minutes. Bring water one and a half cup to full boil, add Gur to taste, boil for few minutes lest jaggery sourness splits milk, add Ginger crushed and black pepper powder again boil it for few minutes to have taste dissolved in brew to serve your throat and gut. Brooke Bond, Red, Tea leaves are the last to brew, milk cream less adds its flavor, thick boiled milk is delicacy taste heavenly. Pour the brew with love respectfully, in two beautiful China flower sleek cups: offer the one you love most. I offer to my most beautiful lady, my Bride and “Malkin” too, 75Y-9M young, with “Hoka-watchman shrill”, of “Chai Pio Jee”.

 

Now the Chuski starts, one by one,”The first sip is joy, the second is gladness, the third is serenity, the fourth is madness, the fifth is ecstasy,”       

 “Jack Kerouac” bringing many memories of the yesteryears alive dancing before eyes, like the one, while at Simla ( then spelled) during 1966-68, my roommate, a chance friend, elder too, a late riser only remembrance remains; I always being early riser would prepare tea early in cold morning for myself and would ask him, he while still in sleep in bed would make a noise signaling “yes”, Tea in glass tumbler offered: gets up quickly stretching his hand out,  takes cautiously lest it spills, held firm to enjoy the warmth, sip it quickly hottem hot, sitting in the cosy quilt, only face out, once head too, eyes shut, tousled scattered semi grey head hair, black mustaches left “yours faithfully” and right one still holding the “Command”, without brush and without going to wash room, without even gargle or taking water before taking tea, finished the brew, ask somebody to take the tumbler, if none available would place on the head side of the bed, quick enough to cover his face with quilt and then would sleep for another one hour or so, snoring high and loud some time murmur in sleep, used to say sleep after tea is sound and beautiful with wonderful dreams.
